Byron Chaves, PhD
Byron Chaves is an Assistant Professor of Applied Food Microbiology and Extension Food Safety Specialist. His work focuses on risk management strategies for various foodborne pathogenic bacteria including control of Salmonella in poultry products, resistance of Salmonella to biocides, Listeria monitoring in RTE food facilities and fate of L. monocytogenes during refrigerated shelf life. His extension and outreach work focus on food safety management systems, including sanitation, good manufacturing practices, and food regulations (HACCP and FSMA) as well as providing professional development for Nebraska extension educators.
Hiep Vu, PhD
Hiep Vu is an assistant professor of virology and immunology in the Nebraska Center for Virology and the Department of Animal Science. His laboratory studies porcine reproductive and respiratory syndrome virus (PRRSV) and swine influenza A virus (IAV-S).
